Stir-fried pork belly with green pepper
Overview
This year, I often see villagers selling a kind of green pepper, which is a little longer and smaller than bell peppers. The flesh is as thin as long green peppers, but it is not spicy and does not have the strong green smell of bell peppers. So I often buy fried meat.

Cook the pork belly in appropriate amount of water and skim off the foam. The water in which the meat has been cooked can be used to make soup or noodles.

Prepare ginger and garlic.

Wash the green peppers, remove the stems, seeds and cut into shreds or slices.

Add a little oil to the pot, add pork belly, ginger and garlic, stir-fry over low heat.

Stir-fry until the pork belly is oily. Because it will be oily, put less oil in the bottom of the pot at the beginning to prevent the meat from sticking to the pot when it is put into the pot.

Pour in the green pepper, add some salt and stir-fry over medium-high heat.

After the green peppers are soft, add soy sauce, oyster sauce, and sugar, stir well and turn off the heat.
