Christmas cookies
Overview
Cookies are children’s favorite Christmas gifts, so I decided to try making one. I have always resisted the temptation of pigments, so I mixed a few colors myself, but they were indeed not satisfactory. Fortunately, children especially like them, so let’s give it a try!

Prepare all kinds of materials;

If there is no powdered sugar, take granulated sugar and use a food processor to make powdered sugar;

Biscuit making: soften the butter and add 60g of powdered sugar. Stir with the whisk head of the whisk so that the powdered sugar and butter are mixed together. In this way, the powdered sugar will not fly around during the whipping process. Beat the electric whisk at low speed first. After the powdered sugar and butter are mixed, beat at medium speed until the volume becomes larger and the color turns white (this process takes about 2-3 minutes);

Beat the eggs, leaving 14g of egg whites, and mix the rest evenly;

Add the egg liquid in 3 batches, stirring each time until the egg liquid is completely integrated with the butter (do not add the egg liquid all at once to avoid accidentally causing the oil and water to separate), until it is smooth and the egg liquid and butter are completely integrated;

Sift in the low-gluten flour all at once, stir with a spatula, or use your hands to evenly mix and knead into a ball;

You can put it on the chopping board and knead the dough several times, within 10 times. Wrap it in plastic wrap and refrigerate it for at least 1 hour. I put it directly on the balcony to freeze for 10 minutes;

Take out the refrigerated cookie dough, place a piece of parchment paper on the chopping board, place the dough on the parchment paper, and cover it with a layer of plastic wrap;

Roll it out to about 3mm--5mm thick;

You can make the dough into any pattern you like. If you don’t have ready-made tools, you can try cutting out the pattern from a food packaging box and then making it;

Transfer the prepared biscuit dough directly to the baking sheet together with the parchment paper;

Preheat the oven to 180 degrees for 10 minutes in advance. Place the baking sheet in the oven, turn the heat up and down, and set the middle layer to 180 degrees for 8-12 minutes (or you can see that the biscuits are all colored);

Baked cookies.

Chocolate decoration: white chocolate blooms across the water;

Place in a piping bag and decorate the cookies according to your imagination.

Making icing: Put the egg whites in an oil-free and water-free container, add a few drops of lemon juice (or white vinegar), and beat until thick. Sift the powdered sugar into the egg whites in three batches, using a whisk each time to mix the powdered sugar and egg whites evenly;

Divide the prepared meringue into 4 parts, leaving 1 part white, and add coloring to the other 3 parts to create the color you like;

I used green tea to make the green color, egg yolk to make the yellow color, and cherry juice to make the pink color, but the colors were not bright and it was barely usable. Put them into piping bags respectively;

Draw various favorite patterns;

The letter of the horse is drawn by the reins.
