Overview

Neijiang, perhaps a city that many people have never heard of, is located between Chengdu and Chongqing. It is the home that Jingfeng never forgets. Presumably for every Neijiang person who is away from home, apart from their loved ones at home, what they will never forget is the steaming bowl of spicy and fragrant Neijiang beef noodles. (Anyway, since Jingfeng started college, no matter how late he comes home every year, he has to set his alarm clock and get up early the next morning to eat a bowl of beef noodles from Da Neijiang before going home and going to sleep.) Today, Jingfeng will share this hometown delicacy with everyone. Although the taste is somewhat different from the one at home due to limited ingredients, it might as well reflect his longing for home and the expectations of foodies.   1. Blanch the vegetable leaves and put them on the bottom of the bowl

  2. Add the braised beef soup and bone stock to the bowl (see another Jingfeng recipe for braised beef). Add light soy sauce, Baoning vinegar, sesame oil, sugar, millet chili, minced green onions, minced garlic, cooked sesame seeds and other condiments

  3. Add enough water to the pot, bring to a boil over high heat, add noodles and cook (be sure to use high heat when cooking noodles, and stir gently with chopsticks from time to time)

  4. Soak the cooked noodles in ice water for 2 minutes

  5. Spread the noodles into a bowl, top with braised beef, spicy oil, and sprinkle with coriander and green onions
