Oysters are not just fried rice
Overview
In this issue of "Dren's Chef", we invite our friends Chef Guo and Sous Chef Bin to specially recommend one of their oyster-loving dishes - fresh oyster fried rice! Soudren is just responsible for recording here, haha. Special thanks to Chef Guo and Sous Chef Bin for providing me with the materials for this issue. Although the name refers to the simple fried rice with oysters, this dish is actually not difficult to make. Let me share the process with you~~

Have the required materials ready. The protagonist oyster meat selected here is boxed fresh oyster meat bought in the supermarket. All the water in the box must be separated before use. Soak mushrooms, scallops and dried shrimps in hot water for ten minutes and set aside. Don’t forget to cook (of course it’s OK if you have overnight rice prepared in advance).

Cut the lean meat into thin strips, add salt, sugar, and soy sauce to marinate for a while and set aside.

Brush the oysters with oil and plenty of salt, then rinse with water to remove any sand and mucus from the oysters. Do this twice.

Cut the washed oysters into small pieces.

Drain the water from the mushrooms and cut into strips; crush the soaked scallops into pieces. At this point, we have basically prepared all the ingredients for fried rice, except for ginger slices and chopped green onion.

Beating the cooked rice will make it easier to stir-fry.

Boil the pot with ginger slices.

First stir-fry the lean meat over high heat until it changes color, then add the mushrooms and stir-fry together.

Add the scallops and dried shrimps, continue to stir-fry, and season with appropriate amount of salt.

Add the star of this dish - oysters. Stir well, cover the pot and simmer for a while.

Then add enough chopped green onion and appropriate amount of pepper to add flavor.

When you see that the oyster meat starts to shrink and the water starts to dry out in the pot, you can add rice and stir-fry.

Stir-fry evenly and add chopped green onions to make the fried rice more fragrant.
