Onion flavored chicken feet
Overview
Gadier chicken feet are very cheap in our area. They are the claws of large breeder chickens. They have a lot of meat and are easier to cook. I often buy some and take them home to make snacks and chew them while watching TV. It is so enjoyable. Enjoyment and happiness are not necessarily exclusive terms for the rich and powerful. We ordinary people also have our own enjoyment and happiness. The key lies in the state of mind. Speaking of the aroma of onions, most of the pictures that pop up in my mind are of green onions. In fact, when cooking, we also attach great importance to red onions, which are often called dried onions. The flavor will be stronger and more fragrant. I heard from a restaurant that specializes in braised pork rice that red onions must be used when making braised pork. Moreover, the local flavor is strong enough. After watching this video, I pay more attention to it when cooking, especially braised pork, where red onions play an important role. So when making onion-flavored chicken feet, I first pickle them with red onions, and even add the scallion oil I cooked myself. It is really fragrant.

Steps
-
After room temperature, remove the nails from the chicken feet and chop them in half. Put the chicken feet into a bowl of water, add 1 tsp of refined salt, mix well, and soak for 20 minutes;
-
Remove the chicken feet and drain the water with kitchen paper. Cut 1 shallot into shreds and 2 garlic cloves. Put them into a bowl. Add 1/3 tsp of refined salt, 1/3 tsp of pepper, and 1 tbsp of fried scallion oil. Mix evenly with your hands and let stand for about 20 minutes;
-
After finishing, put the ceramic bowl in the air fryer. The chicken feet are sticky and tend to stick to the bottom of the air fryer. Frequent washing may cause the non-stick coating to fall off, so use a ceramic bowl to hold it;
-
Set to 400°F for 10 minutes. When the time is up, the chicken feet will turn golden brown;
-
Shred 2 shallots, cut the green onions and green onion leaves into dices, shred 1 handful of onion, shred 1/2 green pepper, turn on the pot and raise the heat, put self-frying scallion oil in the bottom of the pot, add shallots, chives, onions and chili shreds, saute until fragrant;
-
Pour in the chicken feet, cook in 1/4 tsp of refined salt, 1 tbsp of soy sauce, 1 tbsp of white wine, 1/3 tsp of pepper, 1/4 tsp of brown sugar powder, add about 1/4 cup of water, stir-fry until the juice is reduced and serve. Enjoy!
