The main ingredient is chicken gizzards. Wash the chicken gizzards (note that the yellow hard skin on the back of the chicken gizzards must be peeled off) and cut into thin slices according to different tastes.

Cut the spicy ingredients (red pepper, green pepper) into about an inch long, and chop them as finely as possible; mince the spices, the shallots, and shred the garlic and ginger (the shredded ginger is used to remove the smell of chicken gizzards).

Prepare all ingredients and condiments. Including oil, salt, soy sauce, vinegar (used to improve taste and appetite), chili pepper, onion, garlic, ginger, and chicken gizzards.

Wash the pot, burn it over high heat to dry up the water stains, then pour 2-3 tablespoons of cooking oil. Wait until the oil is 7-8 minutes hot. If you don't know the heat, wait for about 10 seconds until you can clearly feel the oil temperature.

When the oil heats up, add shredded garlic, ginger and white onion, stir-fry. Remember not to add minced green onions, otherwise the oil will turn black due to the high temperature during stir-frying, affecting the color of the dish.

When the aroma of the seasoning can be smelled, add the chicken gizzards and continue to stir-fry.

Stir-fry until the color of the chicken gizzards changes from bright red to 80% to 90% white, then add the chili pepper.

Pour in the two kinds of peppers and continue to stir-fry for about 2-3 minutes until the peppers are half cooked. Ready to add salt.
