Brush the oysters clean.

Put cold water in the pot, add onions and ginger.

Place the oysters on the steaming curtain, with the drum surface facing down and the flat surface facing up, turn on the heat, and start timing for three minutes when the water boils to produce steam.

After steaming, cool naturally and use a knife to remove the oyster meat.

Chop garlic and red pepper (use Thai pepper if you like spicy food), heat oil until smoking and pour on top.

Add two tablespoons of hoisin soy sauce.

Add half a spoonful of oyster sauce.

Add a little sesame oil.

Add appropriate amount of vine pepper oil (according to your own taste).

Mix well.

Pour over the oysters.

Add cilantro to garnish.
