Crucian carp tofu soup
Overview
Crucian carp is sweet in taste and neutral in nature, and enters the spleen, stomach, and large intestine meridians. It has the effects of strengthening the spleen, appetizing, replenishing qi, diuresis, lactation, and dehumidification. The soup is creamy, rich, nutritious and delicious.

Slaughter the crucian carp, remove the scales, gills, internal organs and the black membrane in the fish belly, wash it thoroughly and control the water.

Cut tofu into cubes.

Wash and slice ginger.

Wash and chop coriander.

Wash and chop green onions.

Heat a pan, add a little oil, add ginger and stir-fry until fragrant, then add crucian carp and fry until both sides are golden brown.

Pour in water that covers the fish. (It is best to use hot water, the soup will be easier to boil.)

Cook over high heat until the fish soup turns white. (15 minutes)

After the soup turns white, pour in the tofu, cover the pot, and simmer over low heat for 15 minutes.

Turn off the heat, add salt, and sprinkle with green onions and coriander.

Remove from pot and serve in bowls.
