Apple Oatmeal Cookies
Overview
Put chopped apple meat into the biscuit, and it will be baked with the crispness of the biscuit and the softness of the apple. A very delicious little cookie.

Preheat the oven to 180 degrees. Peel 1 apple and cut the flesh into small pieces and set aside. Thinly slice the other two apples.

In a bowl, beat together the room temperature softened butter and sugar until fluffy and puffy.

Add one room temperature egg and stir until fully incorporated.

Sift in flour and baking powder.

Add oatmeal and mix well.

Add the apple mince and stir.

Scoop out about a tablespoon of cookie batter with your hands, roll it into a ball and place it on a baking sheet lined with baking paper. Pick up an apple slice and press it on top of the cookie. Or sprinkle with some oatmeal

Bake in the oven for 30-35 minutes. Cook until golden around the edges.
