Add ginger slices, a few peppercorns, and pig skin to the water. After the water boils, turn to medium heat and simmer for about 15 minutes (uncovered in the middle).

Take it out and let it dry, use a knife to scrape off the dirt on the surface of the pig skin and the white fat inside the pig skin, and rinse with warm water.

Cut into shreds and set aside.

Heat oil in a pan, add onion, ginger and garlic slices and saute until fragrant.
