Partridge Claypot Rice
Overview
The weather is getting colder, and I want to eat something hot. I happen to have half a partridge left in soup in the refrigerator, which is enough to make a clay pot rice.

Clean the partridge's fine hair and cut it into small pieces. Soak the mushrooms for one hour and cut into strips. Add a spoonful of light soy sauce, a spoonful of Fenjiu wine, half a spoonful of sugar, a little pepper, and a little sesame oil to the partridge, and mix well. Pour in the shiitake mushroom strips and stir again to allow the shiitake mushrooms to absorb the remaining sauce. Marinate for half an hour.

Wash the rice, put it into a casserole, add water and bring to a boil over high heat. Reduce the heat to low and cook until the water dries up. Add the marinated ingredients.

Rotate the casserole occasionally to prevent burning, and do not open the lid halfway through.

After about 8-10 minutes, turn off the heat, add chopped green onion or coriander, and continue to simmer for 2 minutes.

Floss the rice and mix well before eating.
