  1. The wild sansho peppers bought from this brand are delicious, not salty and spicy enough

  2. For sauerkraut, I use the brand from my hometown. Other brands depend on your own taste

  3. Slices of black fish, add sugar, MSG, cooking wine, and dry starch and marinate for 15-20 minutes

  4. Add appropriate amount of onion, ginger, garlic, dried chili sugar, sauerkraut and fry in oil

  5. It must be fried until the sauerkraut is oily. This step is very important

  6. Add wild pepper, onion, and appropriate amount of water. Add salt to taste

  7. After the water boils, add the snakehead fish

  8. Add fans and add what you like

  9. Turn off the heat and add coriander and peppercorns

  10. Drizzle with hot oil. Serve.
