Half a Qingyuan chicken, remove the head, neck and claws. Add appropriate amount of salt, chopped ginger, cooking wine and cornstarch and marinate for fifteen to twenty minutes.

Marinate and set aside

Appropriate amount of shiitake mushrooms, washed

Cut and set aside

Chop garlic, ginger and small pepper. Small pieces of rock sugar (because there is no white sugar at home, I used rock sugar instead, but I did not use the whole piece)

Heat oil in a pan, add all the spices to the rock sugar, and stir-fry until fragrant.

Pour in chicken

After changing color, add the mushrooms

Continue to stir-fry

Add a small amount of cooking wine, salt and rock sugar and continue stir-frying

Add a small amount of water, cover the pot and simmer.
