Steps
-
Prepare the ingredients: 100g beans (I bought short beans, about a dozen), 2 eggs, 40g pork belly (diced and lightly marinated with salt), 2 garlic cloves
-
Boil about 300ml of boiling water, add 1 or 2 drops of oil, wash and remove the string beans and blanch them in the boiling water for a while, remove and drain (because you are not buying organic beans, as you are afraid of pesticide residues on the beans), drain the water, and cut the string beans into 0.5cm long dices
-
Crack the eggs into a bowl, add 1/4 spoon of salt, and mix well
-
Make sure there is no water in the pot, add 1 tablespoon of oil, then add the garlic and stir-fry for a few times, then add the marinated diced pork and stir-fry until the meat changes color
-
Add the green beans and stir-fry for a few times. Add 1/4 of the salt and 1/6 spoon of pepper. Stir-fry for a few times. Place the green beans into the middle of the pot and spread them out
-
Pour the egg liquid into the green beans and fry over low heat. When you see the egg liquid on the edge begins to condense, pick up the pan and tilt it slightly to let the egg liquid in the middle flow out of the edge. Put down the pan and continue frying. Please note that you can use a spatula to turn it over during frying to ensure that the bottom is not burnt
-
Because I fried it in a small wok, it is not as easy to flip the slices as it is in a pan, so I chose to cut a few slices and flip them, fry them for a while, and then put them on a plate

The sweet beans and egg flavor will probably be enjoyed by children who don’t like vegetables
