Double pepper rabbit
Overview
My mythical beast suddenly wants to eat rabbit. The food we eat outside is too spicy and he can't stand it every time he comes back from eating it. So every time he wants to eat it, he buys it and makes it himself. It tastes so good that he can eat an extra bowl of rabbit (I bought one and cooked it in two times).

Wash the purchased rabbit meat and cut it into dices about the size of the nail plate of a big female finger.

Put a small spoonful of pepper water soaked in boiling water in advance into the meat, add pepper, a little light soy sauce and cooking wine, mix well, then add two tablespoons of starch, continue to mix well, add a little oil, mix well and marinate for 10 minutes, then set aside.
-
Cut green and red bell peppers into pepper rings and set aside.
-
Heat a little more oil in the pan, add the marinated rabbit meat and stir-fry.
-
Fry until the oil in the pan slowly turns clear.
-
Add ginger, garlic, and peppercorns, add a little cooking wine, and continue to stir-fry until fragrant. Add a little sugar to enhance the flavor.
-
Pour in the chili peppers and stir-fry until the spiciness develops, then turn off the heat and add a little chicken essence, stir evenly to enhance the flavor. If you don't like it, you can omit it. Just take it out of the pan and serve it on a plate.
