Pickled Candied Garlic
Overview
It’s the season for this year’s new garlic again. The weather is sultry in summer and I have lost my appetite. A few bites of sugar garlic, sour and sweet, well... my appetite will be whetted immediately. ^_^ There are many ways to pickle sugar and garlic online. I will give it a try by combining the methods of various masters. 😄

Peel off the two outer layers of fresh garlic, wipe it with a dry cloth and let it dry overnight! Never wash garlic (soaking it in water for three days is troublesome, time-consuming and easy to damage)

Prepare vinegar, sugar, white wine and clean oil-free and water-free glass jars

Prepare old ginger and dried chili pepper (the non-spicy one to enhance the flavor)

Add sugar to the glass jar

Pour in the rice vinegar. The ratio of sugar to vinegar is 3:4. This is my personal taste. If you like it sweeter, you can add more sugar. If you like it sour, you can add more vinegar. In short, just taste and adjust until you get the sour and sweet taste you like

Stir until sweet and sour blend

Add garlic, ginger, dried chili pepper, and finally pour in white wine (I used sorghum wine, don’t add too much, just use the same amount as cooking wine for cooking)

Seal with plastic wrap and cover

Place it in a cool and ventilated place and you can eat it after one month
