Swordfish bought from the market, thawed

Use kitchen shears to cut off the fins on the back

Remove the head

Cut the fish into segments, cut open the belly, and remove the contents and black membrane

Remove the red and black ones too

Thoroughly clean

Process all the fish segments and place them in a container with mesh to control the water

Heat oil in a flat-bottomed non-stick pan, add fish segments, and fry over medium heat without moving

Fry one side until golden brown and then flip over

After frying both sides, set aside. I bought 4 pieces of fish and fried them in two pans

Prepare sauce: 2 tablespoons balsamic vinegar, 1.5 tablespoons light soy sauce

After frying the fish, there will be some oil left in the flat-bottomed non-stick pan. It is very dark in color and should be discarded. Refill the oil and heat it up. Don’t use too much oil. Sauté the onion, ginger and garlic until fragrant

Pour in the sauce

After boiling, taste it, make up for whatever is missing, adjust it to your favorite taste, and then add the fried fish segments

Let each fish segment come into contact with the soup

Bring to a boil over medium heat, shaking the pot a few times to allow the fish to fully absorb the flavor. When half of the soup is left, use chopsticks to turn the fish over

Cook until only the bottom of the pot is left with the soup, then pour in 1 tablespoon of balsamic vinegar

Shake the pot to distribute the balsamic vinegar evenly, turn off the heat and remove from the pot (don't let it dry out, be sure to leave some soup. I made this today, and some of the soup is on the bottom of the pot, but it doesn't seem to be visible in the picture)

Finished product. There is soup at the bottom of the plate. You can dip some of the soup at the bottom of the plate when eating fish. Of course, it’s delicious without dipping too😄
