A touch of sweetness - shredded sweet potatoes
Overview
When I was a child, I liked drawing silk things very much, and my father would make them for me every once in a while. I have made shredded yam, shredded apples, and shredded potatoes. My favorite is shredded sweet potato. It tastes sweeter than yam and potatoes, but not as sweet as apples. This time I made it myself. Although it is not perfect, the joy of this small success is still full of O(∩_∩)O~.

Wash the sweet potatoes, peel them and cut them into pieces.
-
Pour 6-7% hot oil into a pan and fry over medium heat.
-
Fry until golden in color and set aside.
-
Pour out the oil from the pot, add sugar and water and bring to a simmer.
-
During the cooking process, many bubbles will appear, the water will become less and less, and the sugar juice will become thicker and thicker.
-
Cook until the color of the sugar juice changes to light brown.
-
Immediately add the sweet potatoes and sesame seeds, turn off the heat, toss twice quickly and remove from the pan.

Use chopsticks to pick them up one by one to pick out the shredded sugar. Dip it in cold water before eating, and the outer skin will be even more fragrant and crispy.
