Ingredients: Chinese dough includes bread flour and yeast powder (high sugar resistance).

Mix yeast powder and water and let sit for two minutes.

After mixing the yeast water and bread flour evenly, cover with plastic wrap and refrigerate for 8 hours to ferment.

This is the Chinese dough that has been fermented the next morning.

Main dough ingredients: Chinese dough, eggs, salt, butter, bread flour, milk powder, sugar, bean paste filling.

Put the medium-sized dough into a bread bucket, add eggs (beaten and add some, leave some for brushing the bread surface), milk powder, and bread flour, and start the dough mixing process.

When the dough forms, add salt and continue kneading.

When the salt has merged with the dough and the dough becomes smooth and chewy, add butter and continue kneading.

The butter and dough are fully integrated and the dough becomes soft and smooth, no need to knead out the glove film. Place the dough into a basin and cover with plastic wrap for fermentation.

When the dough is almost doubled in size, press the dough with your hands. If there is a small fingerprint pit and it no longer rebounds, it means it has fermented.

Deflate the dough and divide it into nine equal parts, roll it into a round shape, cover it with plastic wrap and let it rest for 10 minutes.

Prepare the bean paste.

Take out a small piece of dough, deflate it again, and flatten it with your hands.

Roll it into a round shape, add about 17 grams of bean paste, wrap it up like a bun, pinch the edges tightly, and put it in the baking pan.

Make the remaining dough in sequence and place it on the baking sheet for proofing. I use the oven's fermentation setting and put a bowl of boiling water in the oven.

The fermentation time took nearly an hour. Take out the bread dough and preheat the oven to 180 degrees for the upper heat and 170 degrees for the lower heat. Brush the egg wash on the bread crust and sprinkle some black sesame seeds. If you don't have any sesame seeds, you can omit it. After the oven is preheated, put the baking sheet into the oven and bake for 25 minutes. When the surface of the bread is golden, press the sides of the bread with your hands. If there is rebound, the bread is mature. Take it out and let it cool before eating.
