Overview

Wuhan Hot Dry Noodles, together with Shanxi Sliced Noodles, Guangdong and Guangxi Yifu Noodles, Sichuan Dandan Noodles, and Northern Fried Soybean Noodles, are known as the five famous noodles in my country. They are early snacks with Wuhan characteristics. Hot dry noodles are different from cold noodles and soup noodles. The noodles are cooked in advance, mixed with oil and spread to dry. Then they are heated in boiling water and seasoned. The finished noodles are chewy, yellow and oily, fragrant and delicious, and tempting to the appetite.

  1. Prepare ingredients and sauces.

  2. Chop mustard, pickled beans and chives.

  3. If you like spicy food, you can mix the pickled mustard and pickled beans with chili oil or chili sauce.

  4. Mix sesame paste, sesame oil, dark soy sauce, light soy sauce and salt evenly.

  5. Mix the prepared fresh noodles with oil and steam them in a steamer for 10 minutes. Use chopsticks to spread them out and let them cool.

  6. Put the cooled noodles back into the pot and cook for about 1 minute until cooked. Do not cook them too soft. Take it out and put it into a bowl, pour the mixed sauce over it, sprinkle with pickled mustard, pickled beans and chives, mix well while it's hot.
