Overview

I made this winter melon candy once before, but it ended in failure. Some time ago, someone gave me an old zucchini grown in my yard. I heard someone said that it is possible to use zucchini to make melon candies, so after looking at it, I had the idea to try it again. Hence today’s winter melon candy. This time it was finally successful. Material selection was really important at that time. You must choose old melons, the older the better.

  1. One zucchini, cut into strips, mix quicklime and water into lime water at a ratio of 1:100, soak the zucchini for 8-12 hours, and then soak it through the noodles. Then rinse repeatedly under clean water and soak for an hour or two. Remember to change the water 2-3 times along the way.

  2. Squeeze out the water from the processed zucchini, add a layer of sugar, and place the layer of melon neatly. (The amount of sugar used is half that of zucchini)

  3. Place in the refrigerator to soak for 2-3 days. This is the effect after soaking for 2 days. The sugar has completely melted and the melon has become crystal clear.

  4. Take a non-stick pan, pour all the melon and sugar water into the pan, stir-fry slowly over medium heat, stirring constantly, until all the sugar liquid has dried up, then turn off the heat. The melon is still soft at this time.

  5. After turning off the heat, stir continuously. After the temperature drops, pour in the powdered sugar and stir again. After adding the powdered sugar and stirring, the melon sugar begins to harden slowly. After cooling, put it in a box for storage.
