Spicy diced lotus root
Overview
In the cold winter, stir-fry spicy lotus root diced with chili pepper and peppercorns added. The texture is numb, spicy, crispy, and full of flavor. It is super appetizing and makes you sweat after eating!

Prepare the ingredients needed for cooking: 300g lotus root, 200g pork, 20g green onions, 20g shallots, 10g ginger, 30g dried chili peppers, and 5g peppercorns.

Cut the shallots into sections, cut the scallions into finely chopped green onions, shred the ginger, and cut the dried chilies into sections.

Cut off both ends of the lotus root, peel off the skin, wash and cut into diced lotus root. Pour an appropriate amount of water into the pot and bring to a boil over high heat. After the water boils, add the diced lotus root and blanch it for half a minute. Take it out and soak it in cold water for a while, then take it out and drain it. Set aside.

Wash the pork and cut into dices the same size as the lotus root. Add 0.5g of salt and 3ml of cooking wine to marinate.

Heat the wok over medium heat until it is hot in the palm of your hand. Pour in 10ml of peanut oil. When the oil is hot, add chopped green onion, shredded ginger, and a small amount of dried chili. Stir-fry until fragrant, then add diced pork.

Stir-fry over high heat until the meat changes color, then pour in 5ml of soy sauce.

Add the remaining dried chili segments and peppercorns and stir-fry over high heat.

Add the diced lotus root and stir-fry.

Stir-fry evenly and add 1.5g of salt and 20g of green onions. Stir-fry until the flavors are absorbed and take it out of the pan and put it on a plate.
