Pour the oil into the pot and heat it up, (there will be a little smoke coming out from the edge of the pot, when the oil is hot enough, turn off the heat)

Cut the shallots into chopped green onions, put them in a container, pour hot oil directly on the chives and sauté the chopped green onions to make scallion oil

Gradually add water to the flour, and stir continuously with chopsticks until there is no dry powder. No need to use hands to stir the dough. Just stir with chopsticks to achieve the state in the picture above. The softness and hardness of the dough will be appropriate;

Brush the surface of the mixed dough with a little cooking oil, cover it with plastic wrap and let it rest for 30 minutes,

Divide the risen dough into four equal parts,

First take a piece of dough and do the same thing as below. Roll the dough into a thinner sheet. The dough after waking up is malleable and not easy to expose, so roll it out as thin as possible. Sprinkle a little salt on the dough sheet. I put less than 1/4 teaspoon of salt on each cake. You can adjust it according to your own taste. Take 1 tablespoon of the prepared scallion oil and the oil and sprinkle it on the dough sheet.

To coat the entire dough sheet evenly, roll up the dough sheet from bottom to top into a long strip,

Then roll the long strip into a circle from right to left

Let the rolled dough rest at room temperature for 5 minutes, then flatten it into a cake shape with your hands,

Fry the pancake in a non-stick pan over low heat until golden brown on both sides

Before taking the pancake out of the pan, you can tap the sides in the pan a few times and then shovel it out of the pan. This way the layers of the pancake will be more obvious and the pancake will be more crispy
