Braised Chicken with Mushrooms
Overview
Stewed Chicken with Mushrooms is a delicious, nutritious dish that goes well with rice. The vegetarian flavor of shiitake mushrooms and the meaty flavor of chicken are combined with the flavor of green onion, ginger and star anise, plus a little bit of dried chili. It is especially delicious with rice!

Wash the chicken and cut into pieces.

Wash the mushrooms and soak them in warm water, cut the green onions into sections, slice the ginger, and cut the dried garlic and chili peppers and set aside.

Pour oil into the pan, when the oil is hot, add a few chicken pieces and fry until they change color.

Add the green onions, ginger slices, bean paste, and dried red pepper and stir-fry evenly.

Pour in the cooking wine.

Add dark soy sauce, light soy sauce, sugar, salt and stir-fry evenly.

Pour boiling water to cover the chicken, add soaked mushrooms, and boil over high heat for 20 minutes.

After adding chicken essence, reduce the juice over high heat.
