Pour 500g of pork ribs into a pot with cold water and cook for 5 minutes. Remove the foam and rinse with hot water.

Add two tablespoons of Shacha sauce, 1 tablespoon of cooking wine, and 1 tablespoon of soy sauce to the ribs and marinate them well.

Marinate for more than half an hour.

Appropriate amount of red pepper. Cut 2 shallots into large pieces, 4 slices of ginger, 3 garlic cloves cut in the middle, and tie two shallots.

Add more oil to the wok. Add ginger slices and fry until edges are browned.

Add the marinated pork ribs and stir-fry for about 2 minutes.

Add cooking wine.

Add ingredients: shallots, green and red peppers, garlic slices, chives and stir-fry.

Add an appropriate amount of warm water, bring to a boil over high heat, simmer over low heat, and pour in the remaining marinade juice.

Simmer until the water is reduced by half, taste the soup and add appropriate amounts of salt and sugar. Don't add too much salt, as the juice will dry up after a while.

Simmer until there is not much water, then turn on high heat to reduce the juice.

If there is not much juice, stir fry frequently.

Remove from the pan and sprinkle with white sesame seeds.
