Homemade Pork Floss
Overview
There is still a lot of stupid pork brought from my hometown during the New Year. It would be good to pick out the lean meat and make some meat floss. It is a good food to supplement protein

Prepare lean pork and soak it in water for two hours

Pour water into the wok, add the pork and blanch it

Sichuan peppercorns, aniseed, green onion and ginger, plus a few bay leaves, put the pork in a pressure cooker until cooked

Tearing it into thin strands is an extremely arduous process. The thinner the tear, the better. I didn’t tear it thin enough and it took more than 2 hours to do it

Put a little oil in the wok, add the shredded pork, stir-fry slowly over the lowest heat, and keep turning the shredded pork to ensure even heating

Halfway through the frying process, add light soy sauce, sugar, and cooking wine, and continue frying until it is completely dry. This process is also very laborious. I fried it for more than an hour.

The finished product would be better if it were torn into smaller pieces, but it tastes great!
