Watercress and Pork Soup
Overview
Pork does not have to be braised or stir-fried. Ingredients to prepare: 1 piece of local pork front leg meat, 1 handful of watercress, 1 piece of ginger, 6 dried oysters.

Rinse the dried oysters with boiling water and soak them for a while.

Peel and smash the ginger, slice the dried oysters, throw them into the soup pot, add 4 bowls of water and bring to a boil.

Wash the whole piece of pork and put it into the soup pot, cover the pot and bring it to a boil, then turn to medium heat and simmer for about 30 minutes.

Next, process the watercress: cut off the head of the watercress, pick and wash it, and soak it for a while.

Remove and drain water.

Place into stock pot.

Cover the pot and boil over high heat for about 20 minutes.

After the soup is cooked, add salt.
