Wash the eggplant and remove the stems, steam in a steamer until soft.

Chop red pepper and garlic.

Add light soy sauce, steamed fish soy sauce, balsamic vinegar, salt, sugar, chili oil, and sesame oil to the minced garlic and stir evenly.

Let the steamed eggplant cool, tear off the long strips and put them on a plate.

Pour in the prepared sauce and sprinkle with chopped chives.
