Borscht
Overview
It’s been too cold these two days and I really want to drink hot soup, so today I made a borscht soup with meat and various vegetables. It’s great with bread or rice. Borscht is a famous Russian dish. It is said that the winter there is cold and there are few seasonal vegetables, so people boil all the vegetables they can find together to make soup and drink it to keep out the cold.

Beef cut into pieces

Blanch it in boiling water

Change the water and put it into the pressure cooker and cook for 40 minutes

Prepare materials

Cut beets into quarters, add water to a pressure cooker and cook for 15 minutes. After cooking, peel and cut into pieces

Cut potatoes, celery heads, and tomatoes into cubes; cut onions into small pieces

Cut cabbage into small slices

Put butter in a pot, heat the oil and sauté onions until lightly browned

Add tomatoes and tomato juice

Add celery head and stir-fry

Add cabbage
-
Stir-fry until water boils, add beef and broth

After the water boils, add potatoes, salt and pepper

After simmering for 20 minutes, add the beetroot, cook for another 10 minutes and serve

Top with 1 tablespoon of whipped cream before serving.
