Cold Melon Pot
Overview
The ingredients used in this dish are very ordinary, but together they taste very good. Even people who don't like bitter melon will give it a thumbs up. This is my specialty. My family, friends, and colleagues are all impressed by this dish. It’s so awesome!

Materials are ready.

Just fry the pork belly. Mine was the leftover meat from lunch, and it was almost all fat, so I didn’t need to add any oil and it produced a lot of oil

Fry the pork belly until the oil is almost released, then take it out. Add the soaked mushrooms and fry until it smells fragrant, then take it out.

Then add garlic, I used whole garlic, and sauté until fragrant. Ready to add bitter melon.

There is no need to pick up the garlic, just pour in the bitter melon, turn up the heat and stir-fry

Pour in an appropriate amount of soy sauce and continue to stir-fry the bitter melon. I added about 3 tablespoons of it. I forgot to take a photo at this step. Stir-fry for a while, then add the fried mushrooms, pork belly, and red pepper, and continue to stir-fry for a while

Then pour in an appropriate amount of boiling water, just enough to cover the ingredients. After the water boils, turn down the heat, cover the pot and simmer. Open the lid occasionally to stir

When you see that the bitter melon is soft, you can add the pickled cabbage, stir well and continue to cover and simmer. If the water is not enough, you can add some boiling water

The bitter melon needs to be simmered until it is completely soft before it tastes delicious. I simmered it for about 40 minutes. Finally, I added a little celery. If you don’t have it, you don’t have to add it. Try to see if the saltiness is enough. If not, you can add some salt. Finally, add some chicken powder and reduce the juice over high heat

Take it out of the pot and put it on a plate. It’s super delicious. Even people who don’t like bitter melon will fall in love with it!
