Soak mushrooms, black fungus, and day lily in advance, blanch and set aside.

Fry the quail eggs first.

Set aside the fried quail eggs.

Cut shiitake mushrooms and black fungus into shreds. Cut the daylily into sections and chop the green onions.

Heat oil in a pan and sauté chopped green onions.

Add the mushrooms and stir-fry until fragrant.

Add water and bring to boil.

After the water boils, add homemade noodles.

After boiling, add cold water twice and season with salt and oyster sauce.
