Burn the pig skin on the fire to remove the fishy smell and hair. Add pork, onion, ginger and cooking wine to cold water.

Bring to a boil.

Remove the meat.

Add oil to pan and stir-fry onion and ginger until fragrant.

Add pork belly.

Add cooking wine and dark soy sauce.

Add light soy sauce, salt and pepper.

Add water, sugar and rock sugar. Add more water and do not add water in the middle.

Add star anise and bay leaves.

Bring to a boil over high heat, then turn to medium heat and simmer for 90 minutes. Keep an eye on the pot to prevent it from drying out.
