  1. Chop the meat into minced meat, put it in a bowl, add a spoonful of bean paste and chopped green onion, and set aside; set aside an appropriate amount of water starch; cut the tofu into cubes, mince the ginger and garlic, and wash the green garlic.

  2. Heat oil in a pan. When the oil is 70% hot, add minced ginger and garlic and sauté until fragrant. Then add minced meat and stir-fry until loose. Add cooking wine, add a little starch, and a little salt.

  3. Add the tofu and stir-fry until soft and tender (about five minutes over medium heat). The tofu is fragile, so be sure to weigh the pot more and stir less. During this period, add a small amount of salt several times.

  4. Chop the green garlic into mince, turn off the heat, add allspice powder, stir-fry the green garlic with the residual heat of the pot and serve on a plate.
