【Shaanxi】Mushroom and Pumpkin Cup
Overview
I have made pumpkin cups many times, and I used to steam them with glutinous rice. It is also a favorite dish of my family. This year during the Chinese New Year, I stewed various edible fungi and tofu together and put them in a pumpkin cup. It is also a very delicious dish. The salty taste of mushrooms is paired with the sweet aroma of pumpkin. This dish enriches the color of New Year’s Eve dinner.

Prepare the pumpkin, cut it into one-third, and use the upper part as the lid of the pumpkin cup.

Place in a steamer and steam until cooked.

Slice the king oyster mushrooms, slice the carrots, slice the mushrooms, soak the shiitake mushrooms and shred them, and cut the mushrooms into florets.

Cut tofu into cubes.

Chop green onions and mince garlic.

Sauté minced chives over low heat.

Add various mushrooms and carrots and stir-fry.

Add tofu, abalone juice and salt and simmer for a while.
