Garlic roasted eggplant

Overview

Recently, I learned a technique from the star chef in "The Craftsman Blowing Water" to grill the eggplant with garlic. It is very useful and can be extended to other ingredients. As long as you master the key points, you can make it easily and taste delicious.

  1. Coat the outside of the eggplant with vegetable oil or lard, and bake in the air pan for 10 minutes.

  2. Chop 2 onions, 1 green pepper, 1 red pepper, and 8 garlic into pieces.

  3. Put the garlic in a small bowl, add 1/4 cup or more of vegetable oil. In short, the oil must cover the garlic particles, and place it in the microwave for 1 minute.

  4. Add pepper, fish sauce, refined salt, red peppercorns and green peppercorns and stir evenly.

  5. Remove the eggplant from the air fryer and make a slit on the lid of the eggplant, but do not cut off, about 3/4 of the diameter of the eggplant.

  6. Then cut along the length of the eggplant to a depth of about 3/4 of the diameter of the eggplant, without cutting off, and make a T-shape with the cut mark in the previous step.

  7. Turn over both sides of the eggplant and place on a plate.

  8. Coat the mixed seasonings, place in the air fryer, set to 390°F, bake for 7 to 9 minutes, ready to eat.
