Fish-flavored eggplant
Overview
Real fish-flavored eggplant does not require meat. It only needs to be simmered with various seasonings to bring out the fragrance. But I was afraid that it would not be able to get that flavor when cooked, so I added pork and salted fish to increase the fragrance, making this dish a real fish-flavored eggplant.

Cut the eggplant into pieces and soak in salt water for 10 minutes.

Put the soaked eggplant in the microwave on high heat for 5 minutes. (This step can usually be done by deep-frying, but I found it too greasy, so I improved it. It still tastes good!)

Prepare other ingredients, dice pork and salted fish, cut green pepper into cubes, cut green onions into small sections, and pat two cloves of garlic.

Adjust the sauce. Add appropriate amount of salt, red oil, soy sauce, sesame oil, vinegar and sesame seeds in a bowl and mix well.

Heat the pork in the pan and stir-fry out the oil.

Add garlic and salted fish and saute until fragrant.

Add the eggplant and stir-fry evenly, then pour in the sauce, cover the pot and simmer for 3-5 minutes until the eggplant is soft.
