Winter Melon Ball Soup
Overview
The most successful meatballs I have ever made, they did not fall apart at all and had a very chewy texture. Last night, the family had a dinner together. As soon as this soup was served, you took a spoonful of it and I had a small bowl, and it was divided up by everyone in an instant.

Prepare raw materials: a piece of winter melon, pork (front meat, with some fat), a piece of lean beef, chopped onion and ginger, add some water, soak for a while to make onion and ginger water

Wash the pork and beef and cut into small pieces and put them into the meat mincer

Add 1 tablespoon of oyster sauce and stir evenly in one direction

The meat filling is not finished until it is smooth. You need to grab the meat balls and beat them into the basin repeatedly. At first, they will be a little loose. The more you beat them, the more the meat fillings will stick together. Until the meat fillings gradually become solid, then the meat fillings will really become strong.

Heat the pot, add a little light vegetable oil, just a little bit is enough, sauté the onions and ginger

After the water boils, turn to the lowest heat and keep the water bubbling slightly around the edge of the pot. Take a small spoon, dip it in cold water, scoop out a spoonful of meat filling to form a meatball, and gently lower it into the water. Dip the spoon in cold water before scooping out the meat filling. This will ensure that the meat filling does not stick to the spoon and the meatballs will be smooth

After all the meatballs are done, turn up the heat, medium heat is enough, bring the soup to a boil and skim off the foam

When the meatballs float, add peeled and sliced winter melon
