Boil water in a pot, add beef tendon, blanch, wash and set aside.

Prepare a package of black tartary buckwheat whole wheat noodles.

Cook whole wheat noodles, drain into cold water and set aside.

Put the beef tendons into a pot of boiling water, add seasonings, and cook for 7 minutes.

Add the bean paste, sugar, pepper, and bonito flakes to the beef stock, stir evenly, then add the beef shank slices and shiitake mushrooms, and simmer over low heat for 40 minutes.
