Wash and soak the rice in enough water to cover the rice for 30 minutes

Bacon and duck legs are washed with water to remove surface impurities and odor of bacon and duck legs

Drain the rice and stir-fry until slightly dry

Pour the fried rice into the pot and add the water used to soak the mushrooms. The amount of water should be enough to cover the rice. Start simmering over low heat. I use a cast iron pot and use low heat throughout.

When the rice is simmered until almost no water is visible, add all the preserved meat and other ingredients (except the sauce), cover the pot and continue to simmer. During this process, the position of the pot must be adjusted frequently to achieve even heating.

Simmer the rice for about 20 minutes and pour the sauce on it before serving.
