Remove the internal organs and head from the hairtail, cut into sections, add 1 spoon of salt and cooking wine, mix well and marinate for 20 minutes.

Add sweet potato starch.

Heat the oil in a pot until it is 70% hot, add the hairtail and fry until golden brown, then remove and control the oil.

Add 1 tablespoon of vegetable oil to the pot, add onion, ginger, garlic, star anise, cinnamon and dry red pepper and saute until fragrant.

Add the hairtail fish, add sugar, 1 spoon of salt, soy sauce and aged vinegar and stir-fry evenly.
