Remove the scales from the carp and wash the gills and internal organs

Boil water (a little more) in a pot, add 5-6 green onions, ginger slices, aniseed, 2 tsp salt and bring to a boil

Pick up the fish tail and pour boiling water evenly over the fish with a spoon,

Put the fish into the pot and cook with the lid on for 8 minutes, turn off the heat

Shred the green onion, shred the dried chili, and cut the coriander into sections

Take a bowl, pour in fresh soy sauce, vinegar, sugar, pepper and MSG and mix well

Remove the fish and put it on a large plate

Pour the sauce evenly over the fish

Take another pot, pour oil, add Sichuan peppercorns, heat and remove the Sichuan peppercorns

Place the shredded green onion on the fish and the shredded chili pepper on top of the shredded green onion
