Spicy Chicken
Overview
Spicy chicken is a famous dish in the Sichuan and Chongqing regions. It is named after Gele Mountain in Chongqing. This dish has a bright brown-red color and a strong spicy flavor. Salty, mellow and slightly sweet. It is generally made with chicken as the main ingredient, plus onions, dried chilies, Sichuan peppercorns, salt, pepper, MSG and other ingredients. It is rich in nutrients and delicious. Although it is the same dish, each place has its own characteristics.

Prepare chicken breasts.

Cut chicken breast into cubes.

Add red oil, salt, soy sauce, pepper, chicken essence and starch and marinate for 10 minutes.

Prepare the ingredients, cut red and green peppers into sections, dice garlic, and cut ginger into rice.

Add oil to the pot, wait until the oil temperature is 30-40% hot, add diced chicken, and drain out the oil (take about 30 seconds to drain)
