Prepare a piece of beef and a handful of green beans.

Pick two sections of beans, shred them, wash them and cut them into small pieces. Wash and cut the beef into strips as thick as your little finger.

Add light soy sauce, oyster sauce, cooking wine, five-spice powder, sugar, egg white and 1 tablespoon of oil, mix well with your hands, cover with plastic wrap and marinate for 20 minutes.

Cut green onions into diagonal sections, cut ginger into shreds, and cut dried chilies into small rings.

Pour off the juice from the marinated beef and add an appropriate amount of starch to coat each piece of beef.

Heat oil in a pot, the oil temperature is 60% hot. Pour in the marinated beef and fry for about 5 minutes. Take it out.

Pour oil into the pot and sauté onion, ginger and dried chili until fragrant.
