Remove the head and internal organs of the swordfish and cut into inch-long pieces.

Soak onions and ginger in water for ten minutes and set aside.

Drain the saury with kitchen paper and coat with flour.

Fry in oil pan until browned on both sides.

Add onion and ginger water.

Add pepper, steamed fish soy sauce, soy sauce, sugar and cooking wine and bring to a boil over high heat.

Turn to medium-low heat to reduce the juice.

After serving, garnish with green onions.
