I am from Nanxiong, Guangdong, and what people there like the most is the sour bamboo shoots in our hometown. The taste... we often use sour bamboo shoots to stew duck, chicken, fish, fried pig intestines, fried eggplant, etc... As long as the dishes using Nanxiong sour bamboo shoots are the favorites of Nanxiong people, today I will braise a fish with sour bamboo shoots. Wow... I'm salivating!

Put chili, ginger, salt, cornstarch, soy sauce, rice wine and a little oil

Put the sour bamboo shoots in the pot and stir-fry them to dry out the water, in order to add more sour bamboo shoots flavor to the fish

Add oil and sauté the sour bamboo shoots until fragrant. Add a little more oil and fry the fish later

When you pour the fish in, turn it over quickly a few times. If you turn it for a long time, it will become rotten and not in pieces

Then spread the fish out and let it fry for 5 minutes, turning the pan occasionally to heat evenly until it is all fried

After frying, pour water until the water is almost parallel to the fish. Cover the pot and simmer for about 10 minutes.
