  1. Soak the fungus in hair and wash it. (The amount I fry is relatively large, you can reduce the amount according to your own situation.)

  3. Wash the leeks and cut into sections.

  4. Wash the bean sprouts.

  5. Soak the vermicelli until soft and cut it.

  6. I'm used to scalding the vermicelli with boiling water.

  7. Finely mince garlic.

  8. Fry the eggs until they are solidified, then cut them into chunks with a spatula.

  9. Heat oil in pan and sauté garlic until fragrant.

  10. Add the fungus and stir-fry, sprinkle a little and cook for about 2-3 minutes. (You can also scald the fungus in advance.)

  11. Add bean sprouts and stir-fry until half cooked.

  12. Add vermicelli and stir well.

  13. Add oyster sauce, light soy sauce and dark soy sauce and stir-fry evenly.

  14. Add leeks and eggs and fry.

  15. Sauté until the leeks are broken and drizzle with sesame oil. (If you want spicy food, add chili oil.)
