Cocoa jaggery cookies
Overview
This biscuit looks average, but tastes good, especially the layer of coarse sugar wrapped around the outside. It has a bit of a gritty texture when chewed, which I particularly like.

Sift the flour and cocoa powder into a bowl, add powdered sugar, salt and vanilla extract

Cut the butter into small pieces, put it in a greenhouse to soften and then put it in a basin

Mix well with a spatula

Then knead it repeatedly with your hands until the butter and flour are completely combined and become a smooth dough

Then slowly roll the dough into a long cylindrical shape

Wrap it in oil paper and put it in the refrigerator to freeze for about 30-60 minutes until frozen hard

Take out the frozen dough and dip it in a layer of coarse sugar

Then cut into small pieces about 1cm thick

Place into a baking tray lined with greaseproof paper, leaving a larger gap

Place in the middle rack of the preheated oven at 170 degrees and bake for about 13-15 minutes
