Overview

Stir-fried dried vermicelli is a Wenzhou specialty. It is also a childhood memory of visiting relatives to give favors. In the past, living conditions were average and transportation was inconvenient, so I would go to relatives’ houses to make fried dried vermicelli as snacks.

  1. Soak the dry powder in warm water until soft.

  3. Heat the pan with cold oil and stir-fry the ingredients until cooked. Add an appropriate amount to develop the umami flavor.

  4. Put the soaked powder directly into the pot, cover the pot and simmer over medium-low heat

  5. Simmer for about 3-5 minutes and use chopsticks to break up the flavor.

  6. When it's almost cooked, add spinach and stir-fry briefly, then add some chopped green onion.
