Overview
The weather is hot and I don’t eat much meat. Make a dish of tiger skin chicken feet to satisfy your craving, which can be eaten hot or cold. The soup in the chicken feet turns into jelly when eaten cold. It’s refreshing to have a glass of beer!

Wash the chicken feet and chop off the chicken nails.

Blanch chicken feet to remove odor.

Put the chicken feet into the oil pan and fry until the surface becomes wrinkled and brown and resembles tiger skin (be sure to cover the pan during this step to avoid burns due to oil splash)

Prepare onions, ginger, aniseed, and bay leaves.

Put the fried chicken feet into the pot, add water, soy sauce, cooking wine, salt, sugar, onion and ginger, aniseed, bay leaves, and oyster sauce.

Bring to a boil over high heat, then reduce to a simmer.

Stew until the chicken feet are cooked through and the soup is thick.
