Wash the tenderloin and cut into thick strips about 0.5 cm wide.

Add corn starch to water, half an egg white, and a few drops of salad oil and stir evenly (so that it can hang the batter thinly). Place the tenderloin strips into the batter and coat them with a thin layer of batter.

Pour enough oil into the pot, heat it to 60% heat, turn to medium-low heat, add the battered tenderloin strips, fry for about one minute, remove and drain.

Then continue to heat the oil in the pot over high heat. When the oil temperature is 80% to 90% hot, pour in the meat strips and fry for a while until golden brown, remove and drain.

Mix tomato sauce, salt, white pepper, rice wine, rice vinegar, and sugar evenly to form a sauce.

Leave a little oil in the pot, stir-fry the minced ginger and garlic over low heat until fragrant
